Olives

Land should be prepared by rotorvating and then rolling flat circles to the perimeters of the tree growth then left for the rain to beat down to create a thin crust, At Trulli land Puglia we find a good time of year to do this is mid October that way you have very little re-growth by the time your first lot of olives fall. Harvest when you see the first purple hue. collect by sweeping the olives in to piles then put them in to lg container ready to be riddled (separate olives from leaves) from here straight into a sack and taken to your local coop or oil press. This would be repeated untill all your olives have fallen.

Well here we are its that time of year again all our trees are preped and ready for the down pour of those little plump darlings looks like it will be a good harvest . Today we swept the land around our olive trees for the last time untill we next gather up the harvest in december .some people are now starting to pick by hand ,as you drive around you will start to see olives of vairing colours dependant on how ready they are . We have already picked our olives for curing they are safely in a salt bath .
